The pitta is a basic traditional bread in middle eastern cuisine and is commonly used in both sides of the political dispute- amongst Jews and Arabs as one. During the high temp baking, steam is trapped inside the pitta and makes the dough inflate. After the baking when the steam is released- a special pocket is created between the pitta’s walls. This pocket allows the pitta to be opened and filled with various foods and makes it somewhat of a vessel.
In this current project, the pitta is baked while being placed in clamps that limit the free rising process and by that prevent the pocket from being made, changing the use of the pitta as a food carrier.
The oppression of the pitta’s rising process and limiting the separation of its walls signifies the pressure under which the Arab citizens in Gaza are experiencing.
Like the walls of the pitta, that by external force are prevented from detaching, so are we, the middle east inhabitants, the pitta eaters Arabs and Jews as one, are situated under pressure, oppression and restraint that affects individual liberty, and creates social, political and financial destruction.
